TikTok Minestrone Soup Recipe

I posted a video the other day making a vegan minestrone soup, and I got a few questions about the recipe! So, here's the recipe along with some quick instructions on how to make a super comforting and yummy soup. :)


Ingredients

  • 2 tbsp water or oil of your choice (I prefer using olive oil for soups)

  • 1 White or yellow onion (dice it up!)

  • 4 Cloves garlic (minced, I add extra since I’m 100% a garlic gal)

  • 3 Carrots (peeled and sliced)

  • 1 Stalk of celery (chopped up)

  • 1 can of Green beans

  • 1 can Diced tomatoes

  • 6 cups Vegetable broth

  • 2 tsp Dried oregano (add in some fresh oregano if you have it too!)

  • 2 tsp Dried basil (add in some fresh basil if you have it too!)

  • ½ tsp Paprika (optional)

  • ½ tsp Red chili pepper flakes (only add this in if you want a bit of a kick)

  • 2 Cups pasta noodles (use gluten free if you need to! I used a veggie packed noodle from Trader Joe’s)

  • 1/2 tsp Salt & Pepper (add more to taste)

Let's get started!

Heat a large pot on medium. Add in water/oil and let sit for a few minutes. Then toss in your onion and garlic, stirring occasionally till they’re light brown.


Add carrots and celery and season with salt and pepper. Stir and cook for 3-4 minutes until the veggies feel a bit softer.


Add in your tomatoes, green beans, broth, basil, oregano, red pepper flakes (if you wanted that kick), and paprika.


Crank up that heat to medium-high and bring soup to a strong simmer. It should start to boil, and that’s when you know it’s time to add in your pasta. Add pasta and stir.


Cook for 10 minutes (or per instructions on your preferred noodle), stirring occasionally. Take it down to a simmer by reducing the heat if you need to.


Have a taste and see if there’s anything you need to add. More salt? Pepper? Toss it in and taste until you like the flavor.


If you’ve opted to add in some greens at the end, now’s the time to do it! Add your kale, spinach, or collard greens and stir it up. Cook for 3-5 more minutes until your greens are worked into the soup.


Turn off the heat, let it cool for a bit, and then serve! Best when stored in the fridge for up to 4 days. You can freeze it too and it’ll stay fresh for up to a month. Enjoy! 
